This Salmon Salad with Orange Vinaigrette dressing delivers BIG flavor. Incorporating salmon into our original Triple Orange Salad adds a good source of protein and heart-healthy omega-3 fatty acids, making this a hearty salad that will keep you satisfied and full.

Directions

Step 1

Whisk together fresh blood orange juice, lime juice, apple cider vinegar, honey, mustard, garlic, olive oil, and salt & pepper to taste. Refrigerate until ready to use.

Step 2

Combine salad ingredients layering lettuce, parsley, red onions, oranges, pistachios, and pomegranate arils. Drizzle with fresh blood orange vinaigrette dressing.

Step 3

Preheat oven to 400°F. Place salmon on a foil-lined baking sheet skin-side down. Bake for 35 – 40 minutes from frozen or 25 – 30 minutes from thawed.

Cook's Notes

You can also use fresh salmon for this recipe. Season with salt and pepper and bake until salmon is cooked through, about 12 to 15 minutes.
