One Pot Tortilla Soup

Our One Pot Tortilla Soup is a healthy and homemade soup ready in 30 minutes. This hearty soup features tender chicken, tomatoes, beans, and corn swimming in an earthy broth with loads of topping possibilities. This recipe can be prepared in a pressure cooker, slow cooker, or stove-top.

Directions

Step 1

Heat the oil over medium-high or use Sauté setting on pressure cooker. Add 1 cup chopped onions, 1/3 cup chopped cilantro, 1 chopped green pepper, and 3 minced garlic cloves. Sauté 3 minutes.

Step 2

Add 3/4 Tbsp Cumin, 1/2 Tbsp Chili Powder, 3/4 tsp salt, and 1 tsp Oregano. Stir.

Step 3

Add 8 cups Broth, 2 cans Diced Tomatoes, 1 1/2 - 2 lbs Gerber Amish Farms Chicken Lovers Choice (2 breasts & 4 thighs), 2 cans Black Beans, 1 can of Corn, 2 Bay Leaves, and 1/4 tsp Crushed Red Pepper (optional).

Step 4

Cover your Instant Pot, set valve to sealing position, and select high pressure for 8 minutes.

Step 5

When done let the steam release naturally for 5-10 minutes. Open and remove the chicken from the pot.

Step 6

Shred chicken with a fork and return to pot.

Step 7

Add 1 1/2 cups shredded cheese to pot and stir.

Step 8

Serve crushed tortilla chip, jalapenos, sour cream, cilantro, shredded cheese, and green onions, as desired.

Cook's Notes

Slow Cooker Instructions: Place 1 cup chopped onions, 1/3 cup chopped cilantro, 1 chopped green pepper, 3 minced garlic cloves, 3/4 Tbsp Cumin, 1/2 Tbsp Chili Powder, 3/4 tsp salt, 1 tsp Oregano, 8 cups (2 cartons) Broth, 2 cans Diced Tomatoes, 2 cans Black Beans, 1 can of Corn, 2 Bay Leaves, and 1/4 tsp Crushed Red Pepper in slow cooker. Stir to combine. Place 1 1/2 - 2 lbs Gerber Amish Farms Chicken Lovers Choice (2 breasts & 4 thighs) on top. Cook on LOW for 6-8 hours or HIGH for 3-4 hours. Remove chicken, shred, and return to the slow cooker. Add 1/2 cup shredded cheddar cheese. Ladle soup into bowls. Serve crushed tortilla chip, jalapenos, sour cream, cilantro, and green onions, as desired. Stove Top Instructions: Add all ingredients to tall stock pot and bring to boil. Reduce to medium heat and cook for 20 minutes, covered or until chicken is cooked through. Shred chicken and return to pot. Ladle soup into bowls. Serve crushed tortilla chip, jalapenos, sour cream, cilantro, and green onions, as desired.
