One Pot Tortilla Soup

Heat the oil over medium-high or use Sauté setting on pressure cooker. Add 1 cup chopped onions, 1/3 cup chopped cilantro, 1 chopped green pepper, and 3 minced garlic cloves. Sauté 3 minutes.
Add 3/4 Tbsp Cumin, 1/2 Tbsp Chili Powder, 3/4 tsp salt, and 1 tsp Oregano. Stir.
Add 8 cups Broth, 2 cans Diced Tomatoes, 1 1/2 - 2 lbs Gerber Amish Farms Chicken Lovers Choice (2 breasts & 4 thighs), 2 cans Black Beans, 1 can of Corn, 2 Bay Leaves, and 1/4 tsp Crushed Red Pepper (optional).
Cover your Instant Pot, set valve to sealing position, and select high pressure for 8 minutes.
When done let the steam release naturally for 5-10 minutes. Open and remove the chicken from the pot.
Shred chicken with a fork and return to pot.
Add 1 1/2 cups shredded cheese to pot and stir.
Serve crushed tortilla chip, jalapenos, sour cream, cilantro, shredded cheese, and green onions, as desired.
