This recipe is easy enough for kids to help! Turn ordinary mashed potatoes into crispy mashed potato puffs filled with bacon, chives, and cheese! It is a nice alternative to traditional mashed potatoes. Mashed with instant mashed potatoes, this recipe is quick and easy to prepare.

This recipe is easy enough for kids to help! Turn ordinary mashed potatoes into crispy mashed potato puffs filled with bacon, chives, and cheese! It is a nice alternative to traditional mashed potatoes. Mashed with instant mashed potatoes, this recipe is quick and easy to prepare.
Servings: 6
- 2 cups Water
- 2 Tbsp Butter
- 2/3 cups Milk
- 1/2 box (6.1 oz) of 13.3 oz Food Club Instant Mashed Potatoes
- 3 Eggs
- 1 cup Cheddar Cheese
- 1/4 cup Bacon Bits
- 1/4 cup Green Onions, chopped
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1/2 tsp Garlic Powder
- Parmesan Cheese, to taste.
- Cooking Spray
Instructions:
- Preheat oven to 400°
- In a large pot, combine water and butter. Bring to boil. Remove from heat.
- Add milk and Instant Mashed Potatoes. Stir to combine.
- Add eggs, cheddar cheese, bacon bits, green onions, salt, pepper, and garlic powder. Stir to combine.
- Spray muffin pan with cooking spray.
- Scoop mashed potato puff mixture into muffin pan.
- Top with Parmesan Cheese.
- Bake at 400° for 30-35 minutes.
