Mexican Street Corn Slaw

This bold and exciting Tex-Mex style slaw is bursting with flavor from LOCAL Ohio produce including tomatoes, corn on the cob, bell pepper, cilantro, and green onion. This family-friendly recipe is a must for any BBQ as quick and easy side dish. It is also great with tortilla chips or served on top of tacos.

Directions

Step 1

Slice corn off cobs. Heat the olive oil in a skillet over medium-high heat. Add the corn and cook until browned, about 6 minutes. Set aside.

Step 2

Mix mayonnaise, sour cream, lime juice, and taco seasoning together in a small bowl.

Step 3

Add cabbage, green peppers, tomatoes, corn, black beans, green onions, feta cheese, and cilantro to a large bowl. Pour sauce over top. Combine to mix well.

Step 4

Cover and refrigerate for at least 30 minutes to let flavors meld together.

Cook's Notes

To make this recipe spicy, add one chopped jalapeno.
