Extra Lucky Pork and Sauerkraut

Our Extra Lucky Pork & Sauerkraut is like an insurance policy for the new year. Pile on the extra lucky ingredients of pork, sauerkraut, and kale to move forward into the new year. This recipe is delicious and easy to prepare in a slow cooker or in the oven.



Step 1

Pat dry the pork loin roast (lucky because pigs root forward - looking into the new year, not back), then season with salt, pepper, and smoked paprika on all sides.

Step 2

In heavy bottom pan, add olive oil and heat to shimmering. Sear pork loin on all sides, for about 3 minutes each side.

Step 3

Add sauerkraut to slow cooker or dutch oven pan. (For less tangy sauerkraut, rinse first.)

Step 4

Add apple juice, chopped onion, sliced apples (red for luck in love and green for luck in finances), and brown sugar. Stir to combine.

Step 5

Sprinkle on caraway seeds and add seared pork loin on top.

Step 6

Slow Cooker Instructions: Cover and cook on low for 8-9 hours. For extra luck, add chopped kale (symbolic for cold, hard cash) during the last 1 hour.

Step 7

Oven Instructions: Cover and cook at 325° for 2 hours or until meat thermometer reads between 145-150°F. For extra luck, stir in chopped kale (symbolic for cold, hard cash) 1/2 hour before done.

Step 8

Let pork rest 15 minutes before slicing.
