Cantaloupe Caprese Skewers
Prep Time: 15 minutes
Whisk together 3 Tbsp of olive oil, 2 Tbsp of fresh lemon juice with salt and pepper to taste. Set aside.
Cut and seed 1 CantaGold cantaloupe and use a melon baller to make melon balls.
Using 8 oz. of Fresh Mozzarella balls, 1 bunch of fresh basil leaves, 1 of bunch fresh mint leaves and 2 oz. Prosciutto, begin assembling the skewers.
Place a piece of cantaloupe on the skewer, followed by a mozzarella ball, a fresh basil leaf, a piece of cantaloupe, a slice of salami or prosciutto, a piece of cantaloupe, a fresh mint leaf, another mozzarella ball, and ending with a piece of cantaloupe.
Drizzle dressing on top of the skewers and top with salt. Serve immediately.
