Whip up this delicious pumpkin hummus coupled with warm pita bread or crisp vegetables for a healthy snack and entertaining!


Step 1

Place chickpeas, pumpkin, lemon juice, 1 Tbsp water, garlic, salt and pepper into food processor; cover. Blend for 1 minute or until smooth.

Step 2

Add additional water, a teaspoon at a time, can be added if a smoother consistency is desired.

Step 3

Stir in parsley.

Step 4

Serve immediately or refrigerate in tightly covered container for up to 4 days. Makes about 2 cups.

Step 5

Serve along with pita triangles or raw vegetables.
