Buckeye Banana Bread

This recipe is easy enough for kdis to help! Turn ordinary mashed potatoes into crispy mashed potato puffs filled with bacon, chives, and cheese! It is a nice alternative to traditional mashed potatoes. Mashed with instant mashed potatoes, this recipe is quick and easy to prepare.

Buckeye Banana Bread

Our Buckeye Banana Bread is a peanut butter and chocolate lovers dream come true. This moist banana bread is studded with buckeye candy and a generous helping of peanut butter and chocolate chips. It is so indulgent that it can be served as a bread or dessert. You'll be begging for your bananas to ripen to make this banana bread recipe over and over again.

Instructions:

  1. Preheat oven to 350ºF.
  2. Whisk together the bananas, sugar, peanut butter, and vanilla until smooth.
  3. In a separate bowl, mix together the flour, baking powder, baking soda, and cinnamon.
  4. Fold the dry ingredients into the wet and just mix until batter forms.
  5. Gently fold in the chocolate chips and buckeyes, careful to not over mix.
  6. Line a 9x5 loaf pan with parchment and lightly spray with non-stick cooking spray.
  7. Pour the batter into the prepared pan.
  8. Bake for 45 minutes (start checking for doneness at 30 minutes, cover the top with foil at that point if needed to prevent over-browning).
  9. Cool on wire rack before slicing.

Our Buckeye Banana Recipe is a fun twist on the classic banana bread. It can be served warm, at room temperature, or chilled. Serve with a tall glass of cold milk. 

This recipe is rich and decadent enough to be enjoyed even as a dessert. For a less-sweet version, you can cut the chocolate chips back to 1/2 cup and the buckeyes back to 1/2 cup.

This recipe requires ripe to overripe bananas. If you can't wait for your bananas to ripen, you can place bananas in a brown paper and close loosely. Ethylene will build up to speed up the ripening process. You can also add an apple or already very ripe bananas to the bag to speed up the process.
