Asiago-Crusted Zucchini and Yellow Squash with Marinara

An easy and delicious zucchini and squash recipe oven-roasted to perfection.

Instructions:

  1. Preheat oven to 425 degrees.
  2. Line a large baking sheet with parchment paper, lightly coat paper with nonstick cooking spray.
  3. Cut zucchini and yellow squash into ¼-inch thick slices. 
  4. Arrange slices in a single layer on baking sheet. 
  5. Combine Asiago cheese, oregano, garlic powder and pepper; sprinkle onto zucchini and yellow squash slices. 
  6. Bake 15 to 20 minutes or until cheese is golden brown, checking for doneness after 12 minutes. 
  7. Meanwhile heat marinara sauce in a small saucepan. 
  8. Serve zucchini and yellow squash slices with sauce.
