Watermelon, Cucumber & Feta Salad

A refreshing and healthy salad for any time of year with fresh-cut watermelon and cucumbers with feta cheese and an easy lime dressing.

Directions

Step 1

In a food processor or blender combine olive oil, lime juice, honey, kosher salt, pepper and jalapeno. Process until smooth and set aside.

Step 2

Arrange the watermelon, cucumber, feta and cilantro on a serving platter. Drizzle with dressing and serve immediately.

Cook's Notes

This recipe can be served in a bowl tossed as well. Add the watermelon, cucumber, feta and cilantro to a large mixing bowl. Gently toss and arrange on a serving platter. Drizzle with dressing and serve immediately.
